What You'll Need:
1 tbsp ground flax
3 tbsp water
1/2 cup unsweetened shredded coconut
1/2 cup gluten-free rolled oats
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp fine sea salt
1/4 cup non-dairy chocolate chips
1/2 cup smooth peanut butter
1 tsp pure vanilla extract
2 tbsp pure maple syrup
Step 1: Preheat oven to 350°F
Step 2: In a small bowl, whisk together the ground flax and water
Step 3: In a large bowl, whisk together the coconut, rolled oats, brown sugar, baking powder, salt, and chocolate
Step 4: Add the peanut butter, vanilla, maple syrup, and flax mixture
Step 5: Form the dough into 12 balls and place them on prepared baking sheet
Step 6: Bake for 12-14 minutes
Step 7: Let the cookies cool completely then enjoy!
