
Step 1) Add 1 cup of sugar to a medium size sauce pan.
Step 2) Add one cup of water into pan with your sugar.
Step 3) Add handful of mint leaves to the pan with sugar and water.
Step 4) Cut Vanilla bean stick down the middle.
Step 5) Use knife to scrape out the little black beans contained inside the stick.
Step 6) Add vanilla beans to pan with all ingredients.
Step 7) Bring to a slight boil. Mix until sugar is dissolved. Pour into a mason jar or glass storing container.
Step 8) Put in refrigerator to cool for several hours. (can leave alone for 1-2 days depending on the strength you want the mint flavoring.)
Step 9) Prepare for use. Take syrup out of the fridge and strain the mint leaves and vanilla beans.
Last Steps: Preparing the perfect mint iced coffee drink. Add ice to you glass. Add milk of choice or half and half. Then add desired amount of your new vanilla mint syrup! (We used about 2 tablespoons.) Pour iced coffee of choice!
