What you will need:
-Chocolate chips (3/4 cup semi sweet or dark chocolate chips)
-Shredded zucchini (1 1/2 cups)
-Flour (1 cup)
-Sugar (1/2 cup)
-Cocoa powder (1/2 cup unsweetened)
-2 eggs
-Greek Yogurt (1/4 cup)
-Canola oil (1/4 cup)
-Instant coffee (1/2 teaspoon)
-Baking powder (1/4 teaspoon)
-Baking soda (3/4 teaspoon)
-Salt (1/4 teaspoon)
-Pure Vanilla Extract (1 teaspoon)
Step 1) Preheat oven to 350. In a large bowl, combine dry ingredients: Flour, cocoa powder, baking soda, baking powder, salt, instant coffee, and chocolate chips. Whisk together until combined.
Step 2) In another bowl, add eggs, oil, yogurt, sugar, and vanilla.
Step 3) Whisk together all ingredients.
Step 4) Combine wet ingredients to your dry and fold together, folding in your zucchini at this point as well.
Step 4) Spray a baking pan with non stick spray . A 9x5 (or 8x4) loaf pan will work. Add batter inside.
Step 5) Bake on 350 for 45-55 minutes. Allow bread to cool completely then stick on a cool board or rack.
