Chicken Teriyaki Pineapple Boats

Can we just have a pineapple with every meal? You will not regret making these chicken teriyaki pineapple boats for your next lunch or dinner! Using only a few ingredients to add to your chicken, a yummy sweet pineapple, and your choice of white or brown rice, this meal will leave you feeling like a professional chef. Enjoy PV fans! Ingredients -Chicken (about 2-3 good size pieces) -Ripe Pineapple -White or Brown rice (enough to fill 2 Pineapples) -Seasame Seeds (optional) -Soy Sauce (1/3 cup) -Brown Sugar (1/2 cup) -Honey (1/4 cup) Step 1) Cut pineapple in half. Using a knife, make slits in your pineapple. Using a spoon, scoop out the flesh of the pineapple and place in a seperate bowl to add to your chicken later. IMG_0003 IMG_0005 IMG_0008 IMG_0012 IMG_0015 IMG_0019Step 2) Cook chicken in skillet. Once cooked, place on a cutting board and cut your chicken into cubes. IMG_0009Step 3) Place cubed chicken back into skillet, set heat to low. Add soy sauce, brown sugar, and honey into your skillet. Stir and cook until hot and brown sugar melts and makes a saucy consistancy. IMG_0020 IMG_0026 IMG_0029 IMG_0030Step 4) Add a few scoops of pineapple to the chicken from the flesh you saved from earlier. Add in a few teaspoons of sesame seeds if you have them for additional flavor. IMG_0034Step 5) Cook about 2 cups of white or brown rice. We used brown rice for this recipe. Scoop your cooked rice into your empty pineapple boat. IMG_0040 IMG_0043Step 6) Add cooked pineapple teriyaki chicken on top of your bed of rice. AND ENJOY!
